Flaxine’s Recipes

Kia ora!

I am Flaxine and I love to make cakes and cookies for the other Bushbuddies. Of course, I can’t go to the shop to buy ingredients so I have to find everything in nature. Sometimes though, if I need something special, I borrow it from the ranger, when he’s not looking. In return, I put a piece of cake or a few cookies in his mailbox.

He is always very surprised to find it.

Below you find some of my favorite recipes. You may want to try them out too.

Flax seed cookies.

you need:

  • walnuts

  • Dates

  • Flax seeds

  • Baking soda

  • vinegar

  • salt

  • raisins

Grind the walnuts between 2 stones till they are small crumbles.

Add small pieces of dates, flaxseeds, baking soda and salt and mix it. Then add water and vinegar to make a sticky dough.

I put the cookies on a hot stone in the sun but you might want to use an oven. Put little heaps on a tray, lined with baking paper. divide the raisins over the top of the cookies.

Bake them for 12 minutes at 180 degrees. let them cool down before taking them off the tray.

seed crackers.

  • 1/3 cup Flax seed

  • 1 cup pumpkin seed

  • 1/2 cup sunflower seed

  • 1 cup sesame seed

  • 1 tbls fennel seed

  • 2 tbls psyllium husk

Mix all the seeds and the psyllium husk in a medium-large bowl.

Add 2 cups of water and stir.

Let it sit for half an hour to stiffen up. Line an oven tray with baking paper and spread the mixture out thinly.

Bake them for 1 hour at 150 degrees. Let it cool down before taking off the tray and breaking it into pieces.
